Shockingly Delicious Crunchy Cauliflower Party Dish Since this post was so popular, I thought I would repost it for all the recent followers of Going Cavewoman. So many of us are going to parties throughout the year. This is a wonderful party dish if you want to take something low calorie, healthy and gluten free for yourself. This is a crunchy comfort food, made into a diet dish. I kept the calories to a minimum, so there is no cheese and they are baked, not deep fried. Just a little oil, lightly sprayed just before cooking (will brown without the spray). Ingredients ½ Head of Cauliflower Florets (4 cups) 2 Cups Gluten Free Bread Crumbs 1 tsp Taco Seasoning ( or your favorite blend ) 2 Free Range Eggs - Beaten 1 Tsp Mustard Oil Spray - Optional Dip ½ cup Marinara 1 Tbs Creamed Horseradish Freshly Ground Sea Salt and Black Pepper Instructions Break cauliflower into florets. SPICY ETHIOPIAN LENTIL STEW This Ethiopian lentil stew is made with veggies and hearty potatoes simmered in berbere-spiced red lentils, for a healthy and flavor-packed dish that’s totally doable on a busy weeknight. If you go to an Ethiopian restaurant you should find something on the menu that looks something like this dish, but it would be called misir wat, and it would be incredibly delicious. I had no idea when I first tried that dish how easy it was to make at home, but here it is, something very no-fuss that you can easily cook up on a weeknight in one pot. I threw some extras into my stew, just because I like extras. The potatoes, tomatoes and spinach wouldn’t be found in traditional versions of the dish, at least as far as I’m aware, but who doesn’t love potatoes, tomatoes and spinach? DESSERT TACOS Oh my yum! I swear, these Mini Chef Mondays posts produce some of the most delicious recipes. I’m not sure what it is about these posts but the idea of collaborating with my kids brings out a ton of creativity and today’s recipe is no different. These Dessert Tacos are super easy to make and are perfect for this week’s Cinco de Mayo festivities.  The deliciousness begins with a few simple ingredients such as flour tortillas, vanilla ice cream, strawberries, chocolate syrup, chocolate sprinkles and cinnamon and sugar. Easy Chicken Enchilada Casserole Easy Chicken Enchilada Casserole – 4 ingredients is all it takes to make this popular Mexican dish. It’s cheesy, it’s spicy, it’s sinfully delicious. Mexican food is my weakness. Totally! I love all Mexican food. I love going to Mexican restaurants and trying everything on the menu. But I also love to make Mexican food. This chicken enchilada casserole only requires 4 ingredients, so it doesn’t get any easier than this. I love chicken enchiladas and this casserole is even easier to make than making regular chicken enchiladas because you just layer your ingredients. Even a kid could make this. LOW FAT BAKED ONION RINGS Crispy and light with no greasy mess. Great as a snack or a perfect side dish to a nice juicy burger! When I was a kid, I loved onion rings with my burger, but never loved that greasy after-taste. Baking them with a blend of Panko, cornflake crumbs and breadcrumbs gives these a fabulous crunch without all the fat. If you can’t find cornflake crumbs you can make your own by pulsing corn flakes in the food processor. The best way to bread them so the breading doesn’t fall off is to avoid using your fingers, instead use tongs to take them out of the breadcrumbs. Also, you have to do this in 2 batches so the crumbs don’t clump. HOMEMADE COOKIE MONSTER ICE CREAM Creamy (no churn!) vanilla ice cream loaded with 2 different kinds of cookies. A cookie lover’s dream come true! I don’t want to sound like an old fogey, but Sesame Street these days is just ridiculous. Apparently Cookie Monster eats vegetables and says that cookies are a “sometimes” food?!?! WHAT?! Pfffttt. If you’re like me and believe cookies are one of the main food groups, then this ice cream is for you! It’s loaded with 2 different kinds of cookies and I mean loaded! No 1-2 cookie pieces per bowl on this blog uh-uh! One thing to note here is the use of store bought chocolate chip cookies. I adore store bought sweets as much as the next guy (okay probably even more, looking at you store bought cupcakes!). However, packaged chocolate chip cookies are not my favorite. HONEY GARLIC SHRIMP SKILLET It’s been awhile since I’ve done a shrimp recipe. The last one I think was coconut shrimp which turned out amazingly good. Especially with that chilled pineapple sauce. So here we have a super simple honey garlic shrimp recipe, all done in the comfort of your skillet. It’s yummy, it’s healthy and oh so easy to make. I used jumbo peeled shrimp with tail on for these. They just tend to look better in pics. But you can use whatever kind of shrimp you like or can easily get your hands on. We begin by making your honey garlic sauce which is basically just some honey, soy sauce, ginger and garlic. Tada! I wasn’t lying when I said simple. Garlic Bread Pasta This Garlic Bread Pasta is the most simple, amazing pasta dish I’ve ever made! It’s good warm, cold even right out of the fridge! I’m talking amazing pasta dish. The pasta dish that makes you say buh-bye to that low carb diet thing, at least for the day. Boil up your pasta they way you always do and drain it. In the meantime heat up a few tablespoons of butter in a large skillet until it’s melted. Then keep on going… Keep cooking the butter while swirling it around the pan so it’s a nice, nutty brown color. Don’t burn it, just get it nice and brown. Toss in breadcrumbs and seasonings and stir it all together until the breadcrumbs are completely coated in the butter. Turn the pan off and set it aside. Now you’re going to melt a whole stick of butter – yes, a whole stick, so not skimp here or you’ll regret it – together in the same dish with a few cloves of minced garlic. Family Favorite Meatloaf Today, I’m bringing over one of my all-time favorite comfort foods…meatloaf. As a kid, I detested this dish. In fact, I hated it so much that my mom would make me a separate hamburger to enjoy while everyone else gobbled up her meatloaf. I don’t know if my taste buds matured or if this recipe is REALLY just that good, but I tried this recipe about 6 years ago and have never looked back. I got this recipe from a high school friend and the hubs (Eric) and I liked it so much, it became our go-to dish to make for company. In fact, our friends have even titled it, “Eric’s Meatloaf.” The sauce is delicious and the melted cheese inside combined with the pepper and onion make for a dynamite combination. GOOEY BUTTER COOKIE RECIPE Ingredients: 1/2 cup softened butter 8 oz cream cheese 1 egg 1/4 tsp vanilla extract 1 yellow cake mix box 1 cup of powdered sugar Directions: Combine butter, cream cheese, egg and vanilla in a bowl and use mixer until light and fluffy. Stir in the dry cake mix until the dough becomes thick but smooth. Pour powdered sugar into a separate bowl, set aside. Scoop a spoonful of the cookie dough and roll into a ball, then dip in the powdered sugar until fully covered. If you want easier dough to work with for rolling, chill in the refrigerator for 30 minutes. Place cookie balls on a baking sheet and bake at 350 degrees for 12 minutes. Momma’s Best Meatloaf Momma’s Best Meatloaf – seriously! I think most folks at some point in their lives have had either great experiences with meatloaf or really bad ones. Maybe the meatloaf was a tad dry or maybe it tasted like a lump of beef and nothing else. And if that bad experience came from childhood, and Mom was trying to feed 9 or 10 children, as was a common situation many years ago, she didn’t have the time (or probably the energy) to be fancy-ing it up. It’s cheap it’s a hot meal on the table. Meatloaf really can taste good Meatloaf is fairly inexpensive, easy, filling and can feed a lot of folks. And perhaps the name does not help it’s case at all, but let’s face it, when a meatloaf is done right, it is so comforting to the soul. Personally, I’m a meatloaf lover.
